Why are some Reserve Prices Shown and Some are Not

The seller gets to decide if they want their reserve price shown. The coloured reserve gauge will show you how close you are getting to the reserve price. The seller can lower their reserve price at any time.

Always bid up to an amount that you are comfortable with.
